Job / Advertisement Description

The Beverage Operations Supervisor reports to the Cococay Assistant Beverage Manager.

Assigned to, and responsible for leading & driving results on Cococay Perfect Day. Responsible, accountable and deeply committed to maintaining the integrity of all island venue’s unique original concepts and all island beverage inventories for front of house beverage storerooms. Assisting in the overall F&B operations while ensuring Royal Way service standards.


All duties and responsibilities are to be performed in accordance with Royal Caribbean International’s, The Royal Way, SQM standards, USPH and HACCP guidelines, environmental, and workplace safety policies and procedures. Each shipboard employee may be required to perform all functions in various food and beverage service venues throughout Cococay Perfect Day.

General Management

·Support Island beverage operations by supervising operations of all beverage venues throughout the island.

Inventory Management

·Manage and support Venue teams to achieve operational efficiency in their respective venues.

·Beverage Operations Supervisor must carefully monitor all expenses and strictly adhere to company’s inventory control operating procedures.

·Fully responsible for all inventories and inventory documentation for all ship visits upon completion of every ship call day.

·Maintain venues with accurate and realistic par levels based on product demand fluctuations, create suggestions for adjustments to par levels and present to Cococay Beverage manager.

·Constantly review operating costs in all venues to ensure inventory is not stolen, destroyed, lost or miscounted.

·Create all weekly cost reports for accounting.

·Oversees regular equipment inventories including, but not limited to, equipment, plastic ware, disposables and replaceable items.


Training and development

·Responsible for assessing training needs by reviewing operational weaknesses and deficiencies and provide relevant motivation, coaching and training to drive venue profitability and guest satisfaction.

·Develop, create, and execute training programs for the benefit of the overall skill set of the Beverage Operations Team, Island and Shipboard.

·Organizes and conducts regular meetings to ensure proper communication between Island team and Shipboard team.

·Ensures all Island Bar team members attend and complete training for ServSafe Alcohol Awareness

·Advise employees of changes or additions to company or departmental policies.

·Required to assist in the evaluation of the performance of the Island Bar Team.


Administrative duties

·Reviews all Sand Dollar reports for inconsistencies in Product Mix versus inventories.

·Works with the Shipboard teams to track and monitor refund request and track discrepancies.

·Administer the beverage gratuity workbook and distribution for the Island Bar team members

·Monitor and track all work schedules for Island Bar team members

·Track all guest service scores for all F&B areas for Perfect Day.

·Provides support for any analytical support on consumption reports for all F&B consumption

·Works closely with the entire F&B island team for administrative assistance.



Minimum hiring, language and physical requirements to perform the job.

Hiring Requirements:

·High school education or vocational; a minimum of five (5) years beverage-related experience and/or training; or equivalent combination of education and experience.

·Ability to write reports and business correspondence. Ability to effectively present information and respond to questions from employees and customers.

·Ability to calculate figures and amounts such as discounts, interest, commissions, tips, proportions, percentages.

Language Requirements:

Ability to speak and read English - analyzes and interprets procedure manuals and memos, technical procedures or governmental regulations.
