Description of Responsibilities

Rosewood Baha Mar's Sous Chef - Cafe Boulud will work together with the Chef de Cuisine to manage all aspects of the kitchen and kitchen team, ensuring the quality preparation of all menu items and proper handling/storage of all food items in accordance with the company's standards. Responsibilities will include, but are not limited to:

  • Utilize dynamic culinary skills and expertise in recipe development to ensure guests are "wowed" by Rosewood Baha Mar's culinary experiences
  • Manage kitchen in the absence of the Chef de Cuisine
  • Create all hotel food menus with the guidance of the Chef de Cuisine
  • Ensure quality food ordering & par levels are maintained while maintaining budgeted costs
  • Liaise with kitchen staff and restaurant management regarding customers' orders and general service of kitchen operations
  • Maintain a safe and hygienic working environment to include proper storage of food, equipment, utensils and implements etc.
  • Perform daily temperature checks of fridges, freezers, storage areas, deliveries and conduct assessments where necessary
  • Ensure high standards of food hygiene and follow established health and safety regulations
  • Monitor portion and waste control to maintain profit margins
  • Know product availability, preparation, nutritional and storage aspects
  • Uphold the highest standards of courtesy and conduct exceeding expectations
  • Proactively support all hotel restaurant tactics always adhering to company policies
  • Document waste and spoilage
  • Immediately report any security, maintenance, housekeeping issues to management
  • Suggest new techniques of service for maximum guest satisfaction at minimum operating costs
  • Total compliance with Rosewood Baha Mar's standards of operation
  • Stay current on culinary best practices and industry trends
  • Perform other duties as assigned
