Job Summary

To provide assistance to the AGM, Beverage, ensuring that quality, cost effectiveness and profitability of the cocktail and spirits programs of Atlantis are maintained. Selects, requisitions, stocks, sells beverages in restaurant or dining room. Inventories beverage collections and maintains stock; pairs the wine to food, conducts training as appropriate and may host wine tasting, or signature beverage events for guest.

Main Duties & Responsibilities

Creates, develops and implements new beverage menu items, tests and writes all recipes for all bars and lounges.
Oversees market research on latest beverage trends, products and technology and remains actively involved with the corporate beverage program and vendors.
Displays a complete understanding of approved beverage partners/beverage program and ensures we are in compliance on all menus and listings.
Collaborates with the Food & Beverage leadership team in the development and execution of the strategic plan and vision.
Develops and implements a comprehensive training and education program for all Atlantis food & beverage staff.
Manages relationships with corporate partners and assist the Food and Beverage leadership, with annual sponsorship budgets and activation business plans.
Assists the Beverage Managers and Assistant Mangers in the daily oversight of all lounge, bar and outlet operations.
Creates and administers all testing materials for beverage promotional bids.
Mentors, provides guidance and leadership to the team and implements strategies to keep the staff motivated and engaged
Oversees daily operations of all lounge, bar and beverage outlets.
Maintains complete knowledge of all liquor brands, beers and non-alcoholic selections available in outlets, the particular characteristics and description of every wine/champagne by the glass and major wines on the wine list, designated glassware and garnishes for drinks, all bar menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
Provides creative direction for internal marketing campaigns, promotions, special events and competitions.
Collaborates with Special Events and Catering and Banquets Departments with developing special beverage menus for functions; meets with clients as requested.
Maintains inventory and orders supplies to replenish stock.
Provide input into ways to further enrich the guest experience and offer extraordinary guest experiences.

Supervises staff, ensuring that correct procedures, methods of service, conduct and grooming policies are followed.
Oversees the design, implementation and maintenance of standard operating procedures, training manuals, policies and practices, ensuring they are aligned with the business goals and policies of the Company.
Serves as the technical expert in beverage ensuring that all beverage employees are developed and trained in the recipes, and mixing techniques for both classic and modern cocktails. Bar setup, glassware, pouring, mixing techniques for each type of drink, best practices, service speed and working clean.
Monitors and records training and development records company wide.
Actively participates in ongoing learning opportunities and enhancing one’s skills, abilities and professionalism for personal growth.
Performs other reasonable duties that may be requested from time to time.


College degree, or equivalent education and experience
At least 5 years of experience in the hospitality industry and previous experience in scheduling and staffing
At least 1 year of management experience in a high-volume restaurant, preferably in a casino environment
Extensive knowledge of all beverage products, menu items and equipment used to perform these duties
Experience in fine dining restaurants
Broad knowledge of wine, especially internationally
Proven knowledge of cost control
Proficient in Microsoft Office and Inventory software
Exceptional communication skills
Excellent customer service skills
Interpersonal skill to deal effectively with all business contacts
Ability to lead and mentor a team
Professional appearance and demeanor
Ability to work varied shifts, including weekends and holidays
Working knowledge of Excel, Outlook, PowerPoint, and Word
Able to effectively communicate in English, in both written and oral forms
