Responsible for assisting Head Chef and Sous Chefs with daily duties. Responsible for peeling, washing, cutting, trimming, seasoning and preparing and cooking vegetables, fruits, pastries, poultry, fish, meats, soups, stocks, sauces or breakfast items for service using a full range of cooking methods under the direction of culinary management.
Main Duties & Responsibilities
Monitors and maintains cleanliness, sanitation and organization of assigned work areas, utensils, and equipment and reach-in coolers. Responsible for complete assembling and disassembling stations.
Maintains and controls station’s par levels; responsible for proper handling of food to reduce wastage, spoiling and contamination of food.
Completes daily production requirements established by Outlet Chef and prepares special diets according to specific guidelines.
Properly uses kitchen equipment and small-wares, supplies proper tools (e.g. knives) required. Reports equipment malfunctions immediately to Chef.
Prepares food items designated to the assigned station in accordance with standards of quality, quantity control, taste and presentation; used standard recipes and presentation guidelines set by the Department. Ensures that all food items are delivered, properly stored, rotated, prepped and ready for service on each station.
Focuses on taste and consistency when producing food or pastry, and follows sanitation standards. Inspects food delivered to the kitchen and informs Chef of unacceptable food items.
Completes the tip sheets and assists with on-the-job training of new kitchen staff and apprentices.
High school diploma or equivalent vocational training
Basic culinary knowledge preferred
Ability to rotate between cook stations in same or another kitchen
Minimum of 1 year experience as a Cook
